Pennette Integrali n. 20 La Molisana pasta salad.

INGREDIENTS:

  • Pachino tomatoes   .
  • Tablespoons extra virgin olive oil   n.10
  • Handful of pistachios (prefer ably unsalted)   n.2
  • Sprig of fresh mint  
  • Clove of garlic   n.1
  • Courgette   n.1
  • Some flakes of Parmigiano thin   n.1
  • Salt to taste   q.b.
  • Sale   q.b.

INSTRUCTIONS:

In boiling salted water cook the Penne Integrali n.20 La Molisana.

While waiting the 13 minute, for Penne Integrali 20 LM. To cook, wash the courgette, cut into slices, and sautéed with a tablespoon of olive oil, the garlic in shirt and a pinch of salt. Take color and, shortly before the cooking is finishing, add a few washed and coarsely cutted mint leaves.

Wash and cut the tomatoes, place in a bowl and toss with a little oil and a pinch of salt.

Crush the pistachio kernels in a not too fine pieces. And keep aside.

Slice the parmesan into flakes.

Once the penne are cooked, drain and cool them under cold running water.

 In a bowl add the pasta the, courgette.  With mint and cherry tomatoes.

 Sprinkle with Parmesan slivers and chopped pistachios.

Decorated with mint leaves, a  of extra virgin olive oil.
