Linguine n.6 with beet pesto

INGREDIENTS:

  • Steamed beet   40g
  • Toasted hazelnuts   200g
  • Tablespoons of extravirgin olive oil   40g
  • Tablespoons of lemon juice   n.4
  • Clove of garlic   n.2
  • Castelmagno cheese to taste   n.1
  • Salt to taste   qb
  • sale   qb

INSTRUCTIONS:

In a Mixer blend the peeled beet ,the hazelnuts, the oil, the lemons juice, a pinch of salt and the ground black pepper. Blend until creamy.

Add salt if necessary and some oil if the pesto is too thick. Cook the Linguine 6 La Molisana for about 7 minutes.

Drain the pasta and season with the beet pesto Serve with a generous sprinkling of Castelmongo cheese.
