Linguine Integrali n.6 with anchovies, ricotta cheese and porcini mushrooms powder

 
PREPARATION

INGREDIENTS:

  • Linguine Integrali n.6 La Molisana  
  • Ricotta cheese  
  • Dried porcini mushrooms  
  • Anchovies in oil  
  • Untreated lemon  
  • Clove of garlic  
  • Extra virgin olive oil to taste  
  • Chili peppers to taste  

INSTRUCTIONS:

Bring to boil in a pot plenty of water.

Put the dried mushrooms in a blender, finely chopped to obtain a thin powder.

Drain the anchovies from the oil and melt on low heat in a pan with oil, a clove of garlic and the chili pepper.

Put the ricotta in a bowl with half zest of lemon and mix adding a ladle of the cooking water.

Add the oil in which the anchovies have melted being careful and remove the clove of garlic. Mix to obtain a smooth sauce. Salt the boiling water, cook the Linguine Integrali 6 La Molisana and drain it al dente.

Complete the cooking in the pan with the anchovies.

Pour the ricotta sauce and mash up carefully adding at the end the mushroom powder.
