Lumachine n.53 with roman broccoli, roman pecorino cheese and smoked bacon

 
PREPARATION

INGREDIENTS:

  • Smoked bacon  
  • Pecorino cheese  
  • Roman broccoli  
  • Egg  
  • Extra virgin olive oil to taste  
  • Olio extravergine di oliva  

INSTRUCTIONS:

Divide into small florets the roman broccoli and place aside.Dice up the smoked bacon.

Bring to boil salted water cook the broccoli florets and the Lumachine 53 La Molisana.

When the Lumachine 53 La Molisana are cooking, heat up a small amount of oil in a frying pan add the smoked bacon and brown for 5 minutes until it becomes nearly crispy.

Add about two fingers of traditional balsamic vinegar IGP for Modena.

In a cup, beat the egg and the Roman Pecorino cheese together. Drain the Lumachine 53 La Molisana when they are still "al dente" tip them into the frying pan with  the warm bacon after having switched of the flame, stir and finally pour the beaten egg with the Pecorino cheese; keep stirring in order to blend everything well.

Serve the Lumachine 53 La Molisana with grated black pepper grains.
