Mafalde with carrot leaves pesto

INGREDIENTS:

  • Fresh carrot leaves   320g
  • Hazelnuts or almonds   50g
  • Grated Parmesan cheese   20g
  • Pinoli   20g
  • Extra virgin olive oil to taste   10g
  • Olio extravergine di ottima qualità   50ml

INSTRUCTIONS:

Bring to boil some water in a saucepan.

In the meantime wash and drain the carrot leaves blend them in a mixer with the other ingredients. When the water boils add a table spoon of salt and the pasta. After 8 minutes the pasta will be cooked season with the carrot leaves pesto, if needed add some water where the pasta has been cooked, parmesan cheese and some oil.
