Rotelle n.71 in a Pumpkin sauce garnished with Gorgonzola cheese and crushed dried fruit.

INGREDIENTS:

  • Pumpkin free skin and filaments   qb
  • Spicy gorgonzola cheese D.O.P   350g
  • Pistachios, walnuts, breadcrumbs to taste   150
  • Sage leaves   qb
  • Sour Cream to taste   n.3
  • Extra virgin olive oil to taste   qb
  • Olio extra vergine di oliva   qb

INSTRUCTIONS:

Place the water for the pasta to boil and in the meantime cut the pumpkin into small dices. Slice up approx. 10 cm of leak.

Heat up a small amount of oil in a frying pan, sauté the leak, add the pumpkin and the 3 sage leaves; stir fry, lower the heat, place the lid on the pan and leave the vegetables to stew. In a small pan, melt the spicy gorgonzola cheese in enough sour cream in order to obtain a smooth and dense cream. Boil the Rotelle 71 La Molisana, drain the pasta when it is still a little chewy "al dente", and in a pan season it with the pumpkin sauce, after having removed the sape leaves, mix in the gorgonzola cream.

Serve completing the dish by adding crushed pistachios and walnuts previously toasted in a frying pan together with a handful of breadcrumbs and no added fat.
