Spaghetto Quadrato n.1 with clams

INGREDIENTS:

  • Genuine clams   320g
  • Extra virgin olive oil to taste   1000g
  • Chili pepper to taste   25ml
  • Clove of garlic   qb
  • Bunch of parsley   n.3
  • Salt to taste   n.1
  • Sale   qb

INSTRUCTIONS:

Bring to cook a pot with at least 4l. of water. Wash the clams carefully under running water, do not depurate for a long time otherwise the clams will die, in the meantime put the oil in a large pan with garlic and chili pepper, as soon as the oil sizzles put the clams in the pan, cover and increase the heat, the claims must open and cook just for a few minutes, then turn off the flame.

Salt the boiling water and cook for 11 minutes the Spaghetto Quadrato® 1 La Molisana, drain and put the pasta in the pan with the clams and some cooking water.

Blend for a while, add parsley and a drizzle of oil.
