Spaghetto Quadrato n.1 with anchovies and bread crumbs

INGREDIENTS:

  • Fresh anchovy fillets   320g
  • Breadcrumbs   200g
  • Big tomatoes   60g
  • Rinds fresh organic lemons   n. 2
  • Mint to taste  
  • Extra virgin olive oil to taste   qb
  • Garlic to taste   qb
  • Salt to taste   qb
  • sale   qb

INSTRUCTIONS:

Cook the Spaghetto Quadrato® 1 La Molisana in salted water, in the meantime in a wide pan heat six spoons of extra virgin olive oil with a clove if garlic.

As soon as the garlic begins to give its fragrance add the diced tomatoes and the chopped anchovy fillets, complete with a pinch of salt.

In a small pan toast the breadcrumbs for a few minutes, taking care that it does not burn,

When the paste is halfway through cooking add it to the pan with the anchovies adding from time to time some water where the pasta has been cooked and stir.

When cooked arrange the pasta on a serving platter and garnish with the toasted breadcrumbs, the lemon rind cut into julienne and a mint leaf..
