Spaghetto Quardato n.1 with crispy breadcrumbs and cherry tomatoes

INGREDIENTS:

  • Spaghetto Quadrato® n.1 La Molisana   320g
  • Stale bread   100g
  • Cherry tomatoes   n.20
  • Clove of garlic   n.1
  • Fresh chili pepper   n.1
  • Fresh thyme to taste   qb
  • Table spoon of sugar to taste   qb
  • Salt to taste   qb
  • Extra virgin olive oil to taste   qb
  • Salted ricotta cheese to taste   qb

INSTRUCTIONS:

Boil the water for the pasta. Meantime peel the garlic and chop half chili pepper. Heat a pan with a few tablespoons of oil and brown the garlic and the chili pepper.

Grind the stale bread with a kitchen mixer reduce it into small pieces. Pour the breadcrumb in a pot with extra virgin olive oil and brown. Flavor it with salt and fresh thyme then put aside.

In another pot sprinkle some sugar and a pinch of salt. Let caramelize. Lay on the bottom of the pot the half-cut cherry tomatoes and cook them two minutes per side.

Drain the Spaghetto Quadrato® 1 La Molisana from the cooking water and transfer it in the pan with the garlic and the chili pepper. Stir well and serve with a sprinkle of breadcrumbs, some cherry tomatoes and, some grated salted ricotta or other cheese of your choice
