Spaghetto Quadrato n.1 with prawns, artichokes and ginger

INGREDIENTS:

  • Artichokes   280g
  • Prawns (frozen ones will also do)   n.4
  • Clove of garlic   n. 20
  • Fresh ginger root   n. 1
  • Glass of white wine   n.1
  • Extra virgin olive oil to taste   n. 1
  • Salt to taste   qb
  • sale   qb

INSTRUCTIONS:

Bring to boil the pasta in plenty of salted water. In a pan warm up the oil with a clove of garlic and the grated ginger, add the artichokes cut in thin slices and cook for a few seconds: make sure they are nice and crispy.

Add the prawns without shells and heads, and parboil them a minute per side; at this point pour in the white wine and let it evaporate. Drain the pasta al dente (to be still firm) and toss in the pan with the artichokes and the prawns add a ladle of cooking water to cream, then add a few mint leaves and, if you like, a few drops of fresh ginger juice.
