Spaghetto Quadrato n.1 with green peppers

INGREDIENTS:

  • Green peppers   320g
  • Tomatoes   n. 4-5
  • Eggs   n.2
  • onion   n.3
  • Extra virgin olive oil to taste   n. 1/2
  • Basil leaf and parsley   qb
  • Salt to taste   qb
  • Chili pepper to taste   qb
  • Peperoncino   qb

INSTRUCTIONS:

Bring to boil plenty of water. Meantime cut the peppers in half, remove the seeds and wash them. Cut into slices and then in half again. Heat a pan.

As soon as it is warm, add the extra virgin olive oil. Wither the onion cut in thin slices. Add the peppers and after a few minutes the tomatoes peeled without the seeds cut In dices. Salt, mix and cook the sauce at low heat. If necessary, add some water.

Add the eggs, keep mixing with a fork. As soon as it will be clotted, add a sprinkling of chilli pepper, the basil leaf and the minced parsley. Drain the Spaghetto Quadrato® 1 La Molisana al dente finish cooking the pasta in the saucepan with the pepper sauce. Add more basil leaves and minced parsley before serving.
