INGREDIENTS:

  • Caserecce Molisane n.29 La Molisana   320g
  • Lean meat of lamb   80g
  • Lean meat of veal   80g
  • Sausage   1 piece
  • Sliced lard   4 slices
  • Extra-virgin olive oil   as required
  • Onion   1 piece
  • Garlic cloves   2 pieces
  • Red wine   1 glass
  • Peeled tomatoes   350g
  • Parsley   to taste
  • Salt   to taste

INSTRUCTIONS:

In a pan with extra-virgin olive oil, brown the chopped garlic, onion, lard and parsley.

Add the meat, the sausage chopped into small pieces and the lard slices rolled up well, already seasoned internally with parsely and chopped garlic. Pour the red wine in and let it evaporate. Add the peeled tomatoes and continue cooking on a low flame for at least two hours. Add the salt.

In boiling salted water cook the Caserecce Molisane 29, drain them al dente and dress them with the sauce.
