Garganelli n.225 tòk-tòk

 
PREPARATION

INGREDIENTS:

  • Garganelli n.225 La Molisana   320g
  • Ground turkey   300g
  • Cooked smoked bacon   150g
  • Celery   1 piece
  • Carrot   1 piece
  • Onion   1 piece
  • White wine   1 glass
  • Vegetable stock   as needed
  • Rosemary   1 sprig
  • Grated pecorino cheese   50g
  • Extra-virgin olive oil   to taste
  • Salt and pepper   to taste

INSTRUCTIONS:

In a saucepan brown the chopped celery, carrots and onion in oil along with the rosemary. Add the diced bacon and ground turkey. Pour in the white wine and allow it to evaporate. Add salt and pepper, to taste. Add a ladle of the vegetable stock and cook for twenty minutes.

In boiling salted water cook the Garganelli 225, drain them al dente and mix with the sauce, adding the pecorino cheese.
