Gnocchetti Sardi n.27 with pumpkin, spinach, and toma cheese sauce

INGREDIENTS:

  • Gnocchetti Sardi n.27 La Molisana  
  • Pumpkin  
  • Spinach  
  • Toma piemontese  
  • Skim milk  
  • Parmesan cheese grated  
  • Butter  
  • Small shallot  
  • Salt  
  • Pepper  
  • Nutmeg  
  • Rosemary  

INSTRUCTIONS:

Wash all vegetables. Dice the pumpkin and the toma. Finely chop the shallots, put it in a pan and brown it with the butter, then add the rosemary and 300 g of diced pumpkin, cook until soft, then blend it  to obtain a creamy consistency.


Boil the remaining diced pumpkin in boiling salted water and cook for 3 minutes, then add the spinach and cook for 1 minute. Remove from the water the diced pumpkin and spinach and incorporate it into puree and cook for a few minutes, adding a few sprigs of rosemary and nutmeg.


Cook the Gnocchetti Sardi n.27 in the boiling cooking water of pumpkin and spinach. Meanwhile, to prepare the cheese sauce, pour the milk and toma in a nonstick pan, bring to a boil and let reduce for a few minutes, then turn off and add the grated parmesan.The sauce should be creamy and not too dry.
Drain the pasta al dente and stir in the cream of pumpkin and spinach. Finish with the cheese sauce by adding a dash of freshly ground pepper to serve.
