Gnocchetti Sardi n.27 con peperoni, acciughe, pomodorini e mozzarella

 
PREPARATION

INGREDIENTS:

  • Mozzarella cheese   n. 4 leaves
  • Peppers   n. 1
  • Cherry tomatoes   n.1 ablespoon
  • Anchovies in oil   n. 1 bunch
  • Basil   1/2 cup
  • Shallots   qb
  • Capers   qb
  • Parsley   n.1 cucchiaio
  • Water   n. 1 ciuffetto
  • Extra virgin olive oil   1/2 bicchiere
  • Salt and pepper   qb
  • Sale e pepe   qb

INSTRUCTIONS:

Wash, drain the peppers and blanch for 5 minutes in boiling water. Chop the shallots, capers, anchovies, parsley, basil and transfer into a large bowl.

Add the chopped tomatoes and the mozzarella cheese. Cook the Sardinian gnocchi 27 of La Molisana in a plenty of boiling salted water, drain al dente and pour into the bowl with all other ingredients. Drizzle with a little extra virgin olive oil and mix.

Fill the peppers, place them in a baking dish greased with oil and add a little water. Bake in preheated oven at 180 degrees for about 50 minutes. Serve hot.
