Gnocchetti Sardi 27 La Molisana with salmon, creamed cabbage and black sesame

 
PREPARATION

INGREDIENTS:

  • Smoked salmon  
  • Carrot  
  • Shalf a leek  
  • Soy sauce  
  • Turmeric  
  • Black sesame  
  • Ginger powder  
  • White wine  
  • Cabbage  
  • Dried sage  
  • Dried chives  
  • Curry  
  • Salt and pepper  
  • Extra virgin olive oil  
  • Olio extra vergine di oliva  

INSTRUCTIONS:

Cut the cabbage and boil it in plenty of lightly salted water until it is cooked and soft. In a bowl add the cabbage, a drizzle of extra virgin olive oil, dried sage, chives, curry, salt and pepper; whisk well with a hand blender until a smooth and velvety soft and set aside.

Finely cut the leek and carrot and fry together with a pinch of powdered ginger and turmeric in a large pan with a drizzle of extra virgin olive oil. Cook for a few minutes and deglaze with a glass of dry white wine and a few drops of soy sauce. Then add the smoked salmon cut into strips, making him jump quickly for a few minutes: the salmon must not overcook so that it maintains its aroma and intense flavor to balance the sweetness of the carrot and leek.
Cook the Gnocchetti Sardi 27 La Molisana in a plenty of boiling salted water, drain al dente (taking care to keep a little of the cooking water), stir in the seasoning and if necessary add a ladle of the cooking water, add a handful of black sesame seeds (better if previously toasted).
put in the center of the plate a generous portion of creamed cabbage and put  above the Sardinian gnocchi "La Molisana". Finish with a quick drizzle of extra virgin olive oil.
