The Millers Gnocchi

INGREDIENTS:

  • Gnocchi di patate La Molisana   500g
  • Grated Parmesan cheese   30g
  • Red chicory   n.1 piece
  • Fresh cream   200g
  • Sweet Gorgonzola cheese   300g
  • Butter   125g
  • Shallots   n.2 pieces
  • Shelled walnuts   n. 8 pieces
  • Salt   to taste

INSTRUCTIONS:

In a frying pan melt the butter and sauté the shallots, add the red chicory cut into thin strips, season with salt and continue cooking at a medium heat. In a bowl soften the gorgonzola cheese with two tablespoons of single cream, then pour the mixture with the rest of the cream into the frying pan, leaving to simmer for a few minutes.

In boiling salted water cook the potato gnocchi pasta, drain and mix with the accompanying sauce into the frying pan. Serve with a sprinkling of grated parmesan cheese and shavings of wallnuts.
