Mezzi rigatoni n.32 with a salmon cream

 
PREPARATION

INGREDIENTS:

  • Mezzi rigatoni n.32 La Molisana   n.40 pezzi
  • Salmon cream   300g
  • Mascarpone cheese   250g
  • Grated grana cheese   50g
  • Gelatine   8g
  • Salt and Nutmeg   as required

INSTRUCTIONS:

In a saucepan bring to the boil half of the cream, add the gelatine which was left to soften and melt in some water. Filter everything and season with salt, nutmeg and cheese. Leave to cool and incorporate the rest of the cream.

In boiling unsalted water cook the Mezzi Rigatoni 32, drain and leave to cool covered in a damp cloth. Arrange the stuffed pasta and cover with the cooked cream which had been cut into cubes.
