Orecchiette Pugliesi n.30 with turnip hearts

 
PREPARATION

INGREDIENTS:

  • Orecchiette Pugliesi 30 La Molisana   320g
  • Turnip tops   1,5kg
  • Salted anchovy fillets   4 pieces
  • Garlic cloves   2 pieces
  • Fresh chili pepper   1 piece
  • Extra-virgin olive oil  
  • Salt   to taste

INSTRUCTIONS:

Clean the turnips using only the tender tops, washing them thoroughly in water. Bring to a boil a pot of water, once boiling add salt and throw in the turnip tops and the Orecchiette. At the same time, in a pan warm up the oil with the garlic. Let this brown together with the chili pepper and add the anchovies (cleaned and cut into pieces).

Drain the Orecchiette al dente and the turnip tops, pour them into the pan and toss in order to mix the ingredients well.
