Orecchiette Pugliesi n.30 La Molisana with shrimp, cheese and potatoes

 
PREPARATION

INGREDIENTS:

  • Orecchiette Pugliesi n.30 La Molisana  
  • Provolone  
  • Peeled shrimp and chopped  
  • Whole prawns  
  • Half a carrot  
  • Potatoes  
  • Extra virgin olive oil  
  • Salt  
  • Pepper  
  • Parsley  
  • Decorative flowers edible  
  • Brandy  
  • Garlic  

INSTRUCTIONS:

Carefully wash the prawns , separate the shells and heads and set aside the meat chopped . Ages fry garlic , parsley stems , shells and heads and toast , add the brandy , let it evaporate and add water to cover . Simmer for another 40 minutes and filter through to get the stock that will be used to cook the pasta.
