Paccheri n.316 with potatoes, fresh onion, mushrooms and roman cimone

 
PREPARATION

INGREDIENTS:

  • Paccheri n.316 La Molisana   320g
  • Potatoes   500g
  • Spinach   500g
  • Fresh onion   200g
  • Mushrooms   200g
  • Roman Cimoni   200g
  • Grana Padano   50g
  • Eggs   n.2 pieces
  • Salt   to taste
  • Pepper   to taste

INSTRUCTIONS:

Wash the potatoes and boil in a saucepan. Once cooked, peel and mash them.

Cut into julienne strips the fresh spring onion, chop the mushrooms and sauté for a few minutes. Stir in the mashed potatoes, Grana Padano cheese and eggs. Put salt and pepper to taste.

In a separate saucepan blanch the spinach and roman cimone and pass them to the blender, until you get a very thick cream. Set aside some tips of roman cimone that will decorate the dish for the final presentation.

In boiling salted water cook the Paccheri 316, drain it al dente and fill with the stuffing of potatoes and mushrooms.

Pour the cream of spinach and roman cimone on a plate, then put on top a filled pacchero, complete with a little of sautéed mushrooms and onion freshly cut into julienne strips and some tip of roman cimone.
