Radiatori Integrali n.73 La Molisana with Adriatic shrimp and white asparagus of Terlano.

 
PREPARATION

INGREDIENTS:

  • Radiatori Integrali n. 73 La Molisana   n.1
  • Shrimps   400 gr
  • A bunch of white asparagus   n. 1
  • Clove of garlic   n.1
  • Extra virgin olive oil to taste   q.b.
  • White pepper in grains to taste   q.b.
  • A few sprigs of parsley   q.b.
  • Salt to taste   q.b.
  • Dry white wine   q.b.

INSTRUCTIONS:

Remove the peel from the asparagus, cut the base and boil in lightly salted water for 7-8 minutes. Keep aside a little ok cooking water.

Shell the shrimp and remove the black filament, sauté in a pan with a clove of garlic and 2 tablespoons of olive oil, then sprinkle with 2 fingers of white wine, salt and set aside.

Cutoof the tops of the asparagus and set them aside. Chope the stems into pieces and blend with 4 tablespoons of olive oil some cooking water and a generous grinding of pepper and set aside.      

In boiling salted water cook the Radiatori Integrali n.73 La Molisana, drain the pasta and toss with the asparagus and shrimps sauce, eventually after adding the some cooking  water . Serve garnished with chopped parsley and asparagus tips.
