Spaghetto Quadrato n.1 with lamb sauce

 
PREPARATION

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Chopped lamb   320g
  • Grated pecorino cheese   30g
  • Salted capers   10g
  • Olives from Abruzzo   20 pieces
  • Garlic   3 cloves
  • Celery   2 pieces
  • Carrots   2 pieces
  • Aromatic Herbs (thyme, bay leaves, rosemary)   to taste
  • Extra virgin olive oil   to taste
  • Salt & Pepper   to taste
  • Vegetable broth   to taste

INSTRUCTIONS:

Chop the garlic, carrots and celery and sauté everything in a pot with extra virgin olive oil. Combine the herbs and leave a few minutes to perfume. Add the chopped lamb, cut into cubes, olives and capers. Season with salt and pepper.

Cover with a lid and cook over moderate heat, basting occasionally with a ladle of broth.

In boiling salted water cook the Spaghetto Quadrato® 1, drain when al dente, and stir in the lamb sauce. Sprinkle with grated pecorino cheese at your pleasure.
