Spaghetto Quadrato 1 Radicchio, Bacon and Smoked Scamorza

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Smoked scamorza   250g
  • Sweet bacon   200g
  • walnuts   6 pcs
  • Italian chicory   1 pc
  • Extra virgin olive oil   to taste
  • Salt and pepper   to taste

INSTRUCTIONS:

Wash the radicchio and cut into strips. Thinly slice the shallot and let it cook in a pan with a little extra virgin olive oil. Add the diced sweet bacon and radicchio. Add the white wine and let it evaporate over high heat. Season with salt and pepper. Turn off the heat and cover to keep warm.

In boiling salted water cook the Spaghetto Quadrato® 1 drain when al dente and stir in the sauce, adding the smoked scamorza cheese cut into small pieces and nuts. Serve hot, perched on a leaf of fresh chicory.
