Spaghetto Quadrato1 with Salmon and Mojito

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Salmon   400-450g
  • Lime   1 pc
  • Sugar cube   1 pc
  • Onion   to taste
  • Mint   to taste
  • Chili   to taste
  • Cuban Rum   to taste
  • Salt   to taste

INSTRUCTIONS:

In a frying pan, with little water, dry the chive finely chopped and a pinch of chili. Add the sugar and slightly caramelize the onion.

Cut the salmon into cubes and add it to the pan with the chive, add a pinch of salt and wait for cooking. When cooking, it is recommended to drain the grease that makes the fish.

Grate the zest of lime and chop the mint and set aside.

In boiling salted water cook the Spaghetto Quadrato® 1, drain when al dente and stir in the salmon sauce. Season with plenty of grated lime peel and mint. Stir in half a glass of rum and the juice of a slice of lime. Plate and serve.
