Spaghetto Quadrato1 with tofu and beetroot

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Beetroot   180g
  • Natural tofu   100g
  • Stalk of celery   1 pc
  • Extra virgin olive oil   3 tablespoons
  • Onion clove   1 pc
  • Vegetable broth   to taste
  • Pepper   to taste
  • Salt   to taste

INSTRUCTIONS:

Cut the beetroot, celery and tofu into small pieces; place them in a bowl, along with the clove of garlic, extra virgin olive oil, salt and a ladle of vegetable broth and place everything to the mixer until you get a smooth sauce. Cook in a pan without letting it thicken.

In boiling salted water cook the Spaghetto Quadrato®1, drain when al dente and stir in the sauce, while it's still dripping, adding some water, if necessary. Serve by adding the pepper.
