Spaghetto Quadrato 1 with Shrimps - Carbonara

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Shrimps   350g
  • Cured pork cheeks aka" Guanciale"   100g
  • Greek yogurt   30g
  • Yolks' egg   3 pcs
  • Extra virgin olive oil   to taste
  • Salt and pepper   to taste
  • Coffee powder   to taste

INSTRUCTIONS:

Put the yolks' egg and yogurt into a bowl, pepper, salt, and beat until it is creamy. Set aside. Meanwhile, clean shell the shrimp and sauté in a pan with a drizzle of extra virgin olive oil and the guanciale.

In boiling salted water cook  the Spaghetto Quadrato® 1 drain when al dente and stir in the of guanciale and shrimp sauce.

Turn off the heat and coat the pasta with yogurt cream. Serve forming nests with the pasta. And before serving sprinkle with the coffee powder.
