Spaghetto Quadrato 1 with Mussels Ossimoro

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Mussels   1 kg
  • Cherry tomatoes   100g
  • Garlic clove   1 pc
  • Extra virgin olive oil   to taste
  • Chili pepper   to taste
  • Salt   to taste

INSTRUCTIONS:

Clean the mussels under cold water running, removing scale, beard and rub with a steel sponge to remove any impurities.

In a pan, brown a clove of garlic with a drizzle of olive oil and chili. Once browned, remove the garlic, and cool the oil. Cook 1/3 of the mussels with tomatoes, cover with a lid and leave on low heat for about thirty minutes.

In the meanwhile, in another pan, cook the remaining part of the mussels and wait for their opening. Once opened, remove the shells and discard the ones that did not open. Add them to the sauce, which is finishing cooking. At this point remove the lid and let it dry on a high heat. I suggest not to add salt.

In boiling salted water cook the Spaghetto Quadrato® 1 drain when al dente and stir in the sauce. Serve the nest pasta sprinkled with the hot sauce.
