Spaghetto Quadrato n.1 with breadcrumbs from staled bread on a chard gauce

INGREDIENTS:

  • Cloves of garlic   320g
  • Extra virgin olive oil to taste   n.2
  • Breadcrumbs from staled bread to taste   qb
  • Parsley to taste   qb
  • Chard   qb
  • Salt to taste   300g
  • Chili peppers to taste   qb
  • Peperoncino   qb

INSTRUCTIONS:

Clean and peel the chards, leaving only the tender leaves. Boil the chards for two\three minutes in plenty of salted water, when ready, sauté them very quickly in a frying pan with a little extra virgin olive oil and one clove of garlic. Place them in a mixer adding a pich of chilli pepper and a touch of oil, mix until you obtain a soft cream. Boil the Spaghetto Quadrato® 1 La Molisana and in the meantime, put a little oil and the garlic in a large frying pan, brown it and then add the breadcrumbs.

Golden them a little, stirring often. Boil the Spaghetto Quadrato® 1 La Molisana until slightly chewy "al dente" and tip it directly in the frying pan with the breadcrumbs, stir slightly and add some chopped parsley. Serve the Spaghetto Quadrato® 1 La Molisana with a few spoonfuls of chard cream, adding some more breadcrumbs and a drop of oil on the Spaghetto Quadrato® 1 La Molisana.
