Spaghetto Quadrato1 with Rocket and Walnuts Pesto and Parmesan

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Rocket   100g
  • Walnuts   50g
  • Parmesan cheese   50g
  • Pecorino cheese   25g
  • Clove of garlic   1/2 pc
  • Extra virgin olive oil   to taste
  • Salt   to taste

INSTRUCTIONS:

For the pesto: clean the rocket, peel the garlic and whisk together with nuts in a mixer (make sure the pesto does not become warm), adding the extra virgin olive oil by pouring it, the pecorino and parmesan cheese and season with salt. Blend until the sauce is fairly homogeneous.

In boiling salted water cook the Spaghetto Quadrato®1 drain when al dente and stir in the rocket pesto and walnuts sauce.

For the parmesan wafer: at the bottom of a nonstick pan, very hot set about 30g of grated cheese. Let it melt until forming a disc irregularly. When warm and with the help of a thin spatula, put on a glass turned upside down so that solidification takes the form suitable to contain the spaghetti. Plate and serve.
