Spaghetto Quadrato 1 with ragout of squid, dried tomatoes and heads of squid

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Dried tomatoes   12 pcs
  • Heads of squids   12 pcs
  • Squids   4 pcs
  • Garlic   to taste
  • Oregano   to taste
  • Extra virgin olive oil   to taste
  • Tomato puree   to taste
  • Chilli   to taste
  • Parsley   to taste
  • Salt   to taste

INSTRUCTIONS:

Clean the squid and chop them in a blender until you obtain a compound fine. Add the mixture of squid in a pan with a drizzle of extra virgin olive oil and a little 'pepper and let it brown. When it has reached a golden color, add the tomato puree and cook for about an hour, add salt and pepper. In a separate pan, saute the heads of squid and dried tomatoes with a drizzle of extra virgin olive oil, garlic and a little 'pepper. Cook, add salt and sprinkle with oregano. Cook the Spaghetto Quadrato ® 1 La Molisana in salted water and drain al dente. Stir adding little by little the cooking water to obtain the perfect creaminess. Serve arranging the squid sauce on the bottom of the dish, place a nest of pasta and garnish with the heads of the squid, dried tomatoes and finally sprinkle with fresh parsley.
