Spaghetto Quadrato1 with Monkfish Fish, Beans and Cherry Tomatoes

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Cherry Tomatoes   4 pcs
  • Monkfish Fish   1 kg
  • Onion   1 pc
  • Carrots   1 pcs
  • Beans (fave novelle)   to taste
  • Extra virgin olive oil   to taste
  • Celery   to taste
  • Salt and pepper   q.b.

INSTRUCTIONS:

Clean the fish by removing the head and fillet the body by reducing it into cubes. Put the head in a pan with water and add celery and carrot. Cook until boil. This fish broth you will use it at the end.

In a large bowl, put the onion with a little olive oil and add the beans; sauté for about 5 minutes, then add the fish, diced tomatoes and salt.

Cook In boiling salted water cook the Spaghetto Quadrato® 1, drain when al dente and stir in the sauce of onion and beans. Add a little bit of the fish broth (previously prepared). Serve with freshly ground pepper.
