Spaghetto Quadrato1 with Veggie Bolognese

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Tomatoes   850ml
  • Carrots   250g
  • Celery sticks   250g
  • Eggplant   250g
  • Courgettes   250g
  • Parmesan   50g
  • Garlic cloves   2 pcs
  • Extra virgin olive oil   2 tablespoons
  • Rosemary sprigs   2 pcs
  • Red chili   1 pc
  • Chopped fresh basil   1 tablespoon
  • Sugar   1 tablespoon
  • Onion   1 pc
  • Salt and pepper   to taste

INSTRUCTIONS:

Sauté for five minutes garlic, onion, carrot, celery and red pepper, finely chopped, with plenty of extra virgin olive oil in a frying pan, add the sugar and mix. Add courgettes and eggplant previously cut into cubes, rosemary and basil. Add a pinch of salt, tomatoes and 250 ml water. Cook over medium heat for about twelve minutes.

In boiling salted water cook the Spaghetto Quadrato®1 drain when al dente and stir in the vegetables sauce, adding if necessary salt and pepper. Serve with a sprinkling of Parmesan cheese.
