Spaghetto Quadrato1 with Pumpkin and Sage

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320
  • Fresh pumpkin   700g
  • Sage leaves   19 pcs
  • Sour cream   4 teaspoons
  • Onion   1 pc
  • Extra virgin olive oil   to taste
  • Salt   to taste
  • Smoked cheese   to taste

INSTRUCTIONS:

Cut the pumpkin into cubes. Sauté the chopped onion in a pan with extra virgin olive oil, until soft and translucent; add the pumpkin. Cook for about ten minutes and if needed, add a couple of ladles of hot water, ten chopped sage leaves, and cook for another five minutes. Stir in the sour cream, salt and mix everything, leave on the heat for another five minutes. Remove the pan from the heat and blend with mixer, but not too much, because the pumpkin sauce should remain slightly watery.

In boiling salted water cook the Spaghetto Quadrato®1, drain when al dente and stir in the pumpkin sauce and cooking for another three minutes; stirring and incorporating a bit 'of grated smoked cheese.

Once cooked, serve with a sprinkling of grated smoked cheese and garnish with five chopped sage leaves and the remaining four, one for each plate.
