Spaghetto Quadrato1 with spread cream cheese and mint

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Spread cream cheese   150g
  • Large fresh green peppers   2 pcs
  • Large bunch fresh mint   1 pc
  • Lemon   1 pc
  • Saffron   1 teaspoon
  • Extra virgin olive oil   3 tablespoons
  • Rings of spicy chili   to taste
  • Salt   to taste

INSTRUCTIONS:

Wash the peppers and remove the seeds and inner strands and cut into chunks. Grind the mint leaves and place in a bowl along with the peppers, lemon juice and salt. Let aside for at least an hour.

Meanwhile, with a ladle of cooking water to dissolve the saffron in a bowl and set aside.

In boiling salted water cook the Spaghetto Quadrato®1 drain when al dente and season with fresh cheese, the mixture of peppers, extra virgin olive oil and saffron. Mix accurately and complete the dish with some spicy chili rings.
