Spaghetto Quadrato 1 with Amatriciana in Vegetable

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Bacon diced   100g
  • Tomato sauce   150ml
  • Extra virgin olive oil   4 Tbsp
  • White wine   3 Tbsp
  • Celery   2 pcs
  • Onion   1 pc
  • Chilli   1 pc
  • Zucchini   1 pc
  • Bell pepper   1/2 pc
  • Grated Parmesan cheese   to taste
  • Salt and pepper   to taste

INSTRUCTIONS:

Put in a saucepan two tablespoons of extra virgin olive oil. Finely chop the onion, celery, zucchini and bell pepper and simmer for about ten minutes on high heat. Season with salt and pepper and set aside.

In a large bowl pour two tablespoons of extra virgin olive oil and sauté diced bacon with chili. Let it brown and simmer with white wine, add the tomato sauce and season with salt, if necessary.

In boiling salted water cook the Spaghetto Quadrato® 1 drain when al dente and stir in the sauce, adding a ladle of cooking water, if necessary.

Serve and add the sautéed vegetables, a generous grinding of fresh pepper and a sprinkling of grated Parmesan cheese.
