Spaghetto Quadrato1 drunk

INGREDIENTS:

  • Barolo (red wine)   500ml
  • Ricotta cheese (salty and dried)   100g
  • Leek   1 pc
  • Sugar   1 tablespoon
  • Extra virgin olive oil   to taste
  • Salt and pepper   to taste
  • Sale e pepe   q.b.

INSTRUCTIONS:

In a saucepan with high sides, pour 500 ml of wine and let the alcohol evaporate on a high heat. Add a tablespoon of sugar and cook the wine until you have almost a creamy smooth texture. Add salt and pepper. Remove it from the heat.

Wash the leek dry and cut them into slices; flour them and, in another pan, add the olive oil. Fry the round slices, and when they are golden and crispy put them on paper towels to dry them, adding a pinch of salt.

In boiling salted water cook the Spaghetto Quadrato® 1, drain when al dente and stir in the sauce,

adding grated ricotta cheese. Serve and garnish with more ricotta cheese, crispy leek slices, and finally drizzle olive oil over.
