Succhietti n.34 on burrata cheese cream with strawberries and asparagus

INGREDIENTS:

  • Burrata cheese   n.4
  • Strawberries   n.4
  • Asparagus   400g
  • Fresh Spring Onion   400g
  • Extra virgin olive oil to taste   n.2
  • Salt to taste   qb
  • Pepper to taste   qb
  • pepe   qb

INSTRUCTIONS:

Blend the burrata with a drop of oil (add milk if necessary). Wash the asparagus and cook them (al dente) for about ten minutes. Cook the Succhietti® n.34 La Molisana in salted water.

In the same time, brown the spring onion in olive oil.  After cut off the tips, leaving them whole, and slice the stem into pieces. Put  the asparagus in the oil and season them.  After few minutes add the strawberries cut into pieces and let's cook for one minute.

Drain the pasta and combine with some spoons of burrata cream; add the strawberries, asparagus and spring onion sauce.

Serve on a bed of burrata cream and decore with asparagos tips  and pepper.
