Peasant s Tagliatelle n.203

INGREDIENTS:

  • Tagliatelle 203 La Molisana   320g
  • Pork cheek   200g
  • Green scallion   1 piece
  • Red sweet pepper   1 piece
  • Smoked Ricotta cheese   50g
  • Extra-virgin olive oil   as required
  • Salt and pepper   q.b.

INSTRUCTIONS:

In a pan with extra-virgin olive oil stew the green onion cut into thin stripes together with pepper and diced pork cheek. Add some water if necessary.

Whip 1/3 of the onion, then put again into the pan. Season with salt and pepper.

In boiling salted water cook the Tagliatelle 203, drain and pour into the pan. Mix well and put into the dishes, add extra-virgin olive oil and some grated smoked ricotta cheese on top.
