Spaghetto Quadrato 1 layed on Chickpeas

INGREDIENTS:

  • Spaghetto Quadrato n.1 La Molisana   320g
  • Boiled chickpeas   400g
  • Garlic cloves   1 pc
  • Extra virgin olive oil to taste   to taste
  • Pepper   to taste
  • Chili pepper   to taste
  • Parsley   to taste
  • Salt   to taste

INSTRUCTIONS:

In a bowl marinade 100g of extra virgin olive oil, garlic, parsley and chili, for about two hours.

Crush a clove of garlic in a pan and sauté lightly in extra virgin olive oil, add the chopped parsley, a little pepper and pour the chickpeas. Sauté over medium heat for about 20 minutes. Blend all the ingredients until creamy.

In boiling salted water cook the Spaghetto Quadrato® 1, drain when halfway of cooking and stir in the cheackpeas sauce. Coat with the cooking water left aside, until reaching al dente cooking.  Serve by placing 2 tablespoons of chickpeas cream at the bottom of the dish. Put on a nest of spaghetti and finish with a sprinkle of fresh parsley.
