INSALATA DI PASTA 72 WITH BORLOTTI BEANS AND SAUSAGE |

Ingredients: 320 g Insalata di pasta n.72 200 g Dried borlotti beans 160 g Salsiccia 200 g Cherry tomatoes 20 g Extra-virgin olive oil 80 g Onion Salt to taste |
PROCEDURE:
- Soak the dried borlotti beans the night before. Boil them, set aside a little of their cooking water, then drain them and set aside.
- Fry the onion cut into strips in the extra virgin olive oil in a pan, then add the sausage cut into slices and brown for about 5 minutes.
- Wash and cut the tomatoes into four wedges, add them into the frying pan, salt to taste and continue cooking for another 10 minutes.
- Add the boiled beans with a ladleful of their cooking liquid and simmer for another 3 minutes. Cook the pasta in plenty of salted water, drain whilst still al dente, then stir into the sausage and bean sauce and serve.
