MACCHERONI 37 WITH COURGETTES, AUBERGINES AND RED PEPPER

DOSES: 1 person COOKING TIME: 10-20 min DIFFICULTY: medium
Ingredients:
Maccheroni n.37 80g
Mozzarella 50g
Carrot 20g
Celery 20g
Courhettes 20g
Aubergines 20g
Red pepper 20g
Onion 10g
Garlic 5g
Salt to taste
Extra virgin olive oil to taste

PROCEDURE:

  • Cube the mozzarella and set aside.
  • Chop the onion, celery, and carrot. Slice the red pepper. Cube the courgette and aubergine. Sauté the onion and garlic in a pan with the oil, then add the celery, carrot and red pepper. Cook for about 10 minutes then add the cubes of courgettes and aubergine along with salt and pepper to taste. Lower the heat, and cover until the vegetables are tender.
  • In boiling salted water cook the Maccheroni 37, drain and pour into a baking dish along with the cooked vegetables and the cubed mozzarella. Mix well and bake at 200°C for 10-15 minutes.
