Since over a century we select solely the finest durum wheats and work them in our mills, where they are admitted only if furnished with a passport that certifies origin and quality.

What characterizes our pasta and makes it unique is the debranning process, made according to traditional stone method, which carefully and respectfully purifies the grain with the aim of obtaining a pasta with absolutely natural taste and high safety standards.

The stone debranning, in fact, starts before traditional milling process and can be considered as a preventive treatment of the grain before the actual grinding phase.

By means of stone debranning the outer layer and the most of its bacterial charge, are removed by a superficial abrasive action carried out between two stones.
