From the mill, the semolina

For over a hundred years, the Ferro family has selected the finest wheat varieties and milled them in their own mill, using skills passed down through five generations, to produce only the finest semolina.

Thanks to scientific research conducted with a team of agronomists, we have selected Italian seeds that yield a high-protein durum wheat with exceptional toughness and elasticity, essential for premium pasta like ours.

Protect labour rights and promote a safe and secure working environment for all workers, including migrant workers, in particular women migrants, and those in precarious employment.

The mill is equipped with a state-of-the-art laboratory staffed by highly specialized personnel and constantly updated state-of-the-art machinery, including new optical sorters that, using optical recognition and cutting-edge algorithms, classify each individual grain and expel impurities at high speed.

In recent years, our mill has implemented general improvements to the grain unloading process, including the introduction of centrifugal fans to reduce 95% of dust. Dust is not released into the atmosphere but is instead conveyed into suitable cone-shaped collectors for recovery and disposal.

High levels of innovation and efficiency have also been achieved in our mill’s milling department. We adopted the pre-milling decortication process back in 2006. Decortication occurs at the beginning of the traditional milling process and can be considered a preventive treatment of the grain before actual milling. Through decortication, the bacterial load contained in the outer bran layers is removed through a surface abrasive action.
