After years of research, we’re proud to announce that La Molisana now offers pasta made exclusively from Italian wheat: the result of a virtuous journey of sustainable agriculture that promotes local crops while maintaining the highest quality and technological standards.

Wheat fields

For years, we have been focusing on high-quality Italian durum wheat and following every stage of its cultivation with the aim of supporting national agriculture and raising quality standards.

Mill

For over 100 years, wheat has been permitted only if accompanied by a passport certifying its origin and quality. Using state-of-the-art technologies such as optical sorters, a huller, and soft milling, we obtain safe and wholesome semolina that we deliver fresh to the pasta factory every day.

Silos

In the heart of the Tavoliere delle Puglie, we have a warehouse that is a European leader in storage capacity. A cutting-edge facility equipped with advanced technologies for the preservation and control of durum wheat.

Pasta factory

At 730 meters above sea level, our pasta factory is one of the highest in Central and Southern Italy. A cutting-edge facility, enhanced by ongoing investments, it features eight production lines, 16 packaging lines, a storage capacity of 35,000 box pallets, and a trigenerator for sustainable energy production.

Why do we write
hulled wheat?

Hulled wheat: healthiness and integrity

Because what characterizes our product and makes it unique is the hulling of the durum wheat, which purifies the grain with care and respect, with the goal of obtaining a pasta with an absolutely natural flavor and high safety standards.

Hurriding, in fact, occurs at the beginning of the traditional milling process and can be considered a preventive treatment of the grain before the actual milling.

Through hulling, a large portion of the bran, and with it the bacterial load contained within the bran layers, are removed through a surface abrasive action.

Our wheat, cleansed of bacteria, mycotoxins, and mold through the specific hulling process, not only guarantees a pasta that is highly compliant with food safety standards but also distinctive in terms of its quality and flavor.

Why do we write bronze drawing?

Bronze drawing: what is it?

Because bronze drawing is the production phase in which the semolina dough, through extrusion force, is pushed against a perforated die; passing through these inserts, the dough takes shape and becomes the “format” we choose on the store shelf.

For its qualitative benefits, La Molisana has chosen bronze drawing for its production, which gently scratches the surface and leaves it pleasantly rough to the touch.
Furthermore, due to the pressure and resistance, the color of bronze-drawn pasta is a bright and delicate yellow, similar to gold and very similar to that of wheat. For true pasta lovers, choosing bronze drawing is a decisive factor, as it enhances the properties of the pasta and the raw material and has the ability to voluptuously retain the sauces, prolonging the pleasure.
